Low fat Italian Chicken

I made this yesterday and even my husband enjoyed it, who says he doesn't like garlic or spinach. It was really tasty and if you are not watching your weight, it would be nice served with pasta or ciabatta bread. It is so quick and easy to make.

Ingredients

  • 2 skinless chicken breasts
    1 tin chopped tomatoes
    half onion
    250gms baby leaf spinach
    two teaspons Waitrose frozen basil or freshly chopped
    8 green olives
    1 small red pepper chopped
    1 clove of garlic crushed
    approx 4 sundried tomatoes in oil cut into pieces
    salt and pepper to taste

Method

  1. Mix together the tinned tomatoes,spinach,onions, basil, garlic, chopped pepperand olives and put into a shallow baking dish. Season to taste. Place the chicken breast on top and scatter the tomatoes on top. Cover with foil and bake at 150 dgs C/gas mark 5 for 25 minutes. Remove foil and cook for further 20 minutes. Serve on its own or with pasta or crusty ciabatta bread.
