    Luxury Bread Sauce

    This creamy sauce is flavoured with cloves, nutmeg, bay and onion. If you like a stronger onion flavour, replace the whole onion with a finely chopped onion, straining it out of the milk before you add the breadcrumbs.

    • 450ml whole milk
    • 1 onion, peeled
    • 4-6 cloves
    • 1 bay leaf
    • 100g fresh white breadcrumbs
    • 25g unsalted butter
    • Generous pinch of freshly grated nutmeg
    • 4 tbsp double cream
    • Salt and freshly ground pepper


    1. Pour the milk into a large pan. Stud the onion with the cloves and place in the pan along with the bay leaf. Bring to the boil, reduce the heat and partially cover with a lid.
    2. Simmer very slowly over a gentle heat for 30 minutes. Remove the onion and bay leaf and discard. Stir in the breadcrumbs, butter, nutmeg and cream. Season to taste and serve warm.
