    Luxury Mixed Nuts and Ginger

    Ingredients

    • 20cm round Waitrose Richly Fruited Christmas Cake
    • 100g crystallised steam ginger
    • 340g jar of Waitrose Pear, Lemon and Ginger Conserve with Walnuts
    • 2tbsp ginger wine
    • 250g bag of Waitrose Natural Luxury Mixed Nuts

    Method

    1. To decorate a 20cm square homemade or Waitrose Richly Fruited Christmas Cake, chop 100g crystallised stem ginger into small pieces.
    2. Mix half 340g jar of Waitrose Pear, Lemon and Ginger Conserve with Walnuts with 2 tbsp ginger wine or apple juice.
    3. Brush half the mixture over the top of the cake. Arrange a 250g bag of Waitrose Natural Luxury Mixed Nuts over the top, then scatter with the pieces of ginger. Finally, brush with the remaining conserve.

    Cook's tips

    If short on time, buy a round or square ready-made or iced cake. An airtight container in a dry, cool place creates the ideal condtions for storage.
