Mackerel and potato salad

150g frozen essential Waitrose Baby Broad Beans
3 essential Waitrose Smoked Mackerel Fillets
300g pot essential Waitrose Potato Salad
1 essential Waitrose Cucumber Portion, deseeded and diced
½ x 25g pack Waitrose Cooks’ Ingredients Garden Chives, chopped
1. Cook the beans in boiling water for 3-4 minutes, drain and cool.
2. Skin and debone the mackerel and break into flakes. Stir into the potato salad with the beans, cucumber and chives. Season with black pepper and serve with crusty bread.
