Mackerel & new potato hash

700g essential Waitrose New Potatoes, diced
1 tbsp essential Waitrose Vegetable Oil
1 essential Waitrose Onion, diced
195g can essential Waitrose Sweetcorn, drained
1 Pack of essential Waitrose Hot Smoked Mackerel
25g pack fresh parsley, chopped
1. Cook the potatoes in boiling wayer for 15-20 minutes, then drain.
2. Meanwhile, heat the oil in a large frying pan and fry the onion for 4-5 minutes, add the sweetcorn and fry for 1-2minutes. Add the potatoes and lightly crush with a potato masher.
3. Remove the skin and bones from the mackerel and break into large pieces. Stir into the panwith the parsley and season. Cook for 1-2 minutes, then serve.
