    Mackerel with Fresh Bay

    • Preparation time: 10 minutes
    • Cooking time: 15 minutes to 20 minutes
    • Total time: 25 minutes to 30 minutes 30 minutes

    Serves: 6


    • 6 x 400-500g fresh mackerel, gutted
    • 12 fresh bay leaves, cut in thirds lengthways
    • 12 tbsp good olive oil
    • Salt and freshly ground black pepper


    1. Cut several vertical slits into each mackerel on one side only, without going through to the bone. Insert the slivers of bay leaves into slits. Put each mackerel on a large square of oiled, heavy-duty foil (or use a double layer of foil), drizzle with olive oil, season and wrap up like a pasty.
    2. Barbecue for 15-20 minutes until just cooked. Do not overcook, as mackerel can be dry. Serve immediately, with lemon wedges.
