    Mango, Papaya and Watermelon Salad

    This tastes really good served slightly chilled - or simply make it using chilled fruit. Serve with fruit sorbet, mango is particularly good.

    Serves: 4


    • 2 ripe mangoes
    • 1 ripe papaya
    • ½ watermelon
    • 20 mint leaves, washed and dried
    • 1 tbsp caster sugar
    • 2cm cube peeled ginger, roughly chopped
    • 1 orange, juiced


    1. Top and tail the mangoes. Remove the skin without cutting away too much flesh. Cut the flesh off the stones and then into equal chunks (not too small). Place in a large bowl.
    2. Top and tail the papaya. Remove the skin. Cut the fruit in half lengthways and remove the seeds with a teaspoon. Cut the fruit into equal pieces. Peel the melon and cut into segments. Remove the seeds with the point of a knife. Cut into equal pieces. Add to the bowl.
    3. Put the mint, sugar and ginger into a blender or processor. Pulse until you have a paste. Add the orange juice and blend into a smooth dressing. Pour over the fruits and mix gently. Serve.
