    Manx 'Blinis'

    Ingredients

    • 55g self-raising flour
    • 55g self-raising wholemeal flour
    • 1 tbsp freshly chopped herbs
    • 1 tsp baking powder
    • salt and pepper
    • 1 small egg
    • 85-115ml milk
    • 2 Manx kippers
    • Crème fraîche
    • Chopped chives

    Method

    1. To make the blinis, sift 55g each of self raising wholemeal flour and white flour, 1tsp baking powder, salt and pepper into a bowl. Add 1tbsp chopped fresh herbs. Beat in 1 small beaten egg and 85-115ml milk to make a dropping batter. Heat a lightly oiled frying pan. Place spoonfuls of batter in the pan and cook until browned then turn and cook the undersides.

    3. Place 2 Manx kippers in a roasting tin, cover with boiling water and leave to stand for 10 minutes. Drain and remove the skin and bones. Flake the fish. Place a spoonful of crème fraîche on each blini. Arrange the kipper flakes on top and scatter with chopped chives.
