Maple-braised red cabbage

Serves: 6
50g unsalted butter
1 onion, finely sliced
small red cabbage (about 900g), finely sliced, core discarded
1 bramley apple, peeled, cored and finely sliced
2 star anise
2 cloves
4 tbsp maple syrup
3 tbsp red wine vinegar
250ml fresh vegetable stock
1. Heat the butter in a large casserole or sauté pan, add the onion and sauté gently for 5 minutes, until soft. Add the cabbage and cook for 5 minutes, then tip in the apple and spices and sauté for another 5 minutes. Stir in the maple syrup, vinegar and stock, then simmer gently, stirring occasionally, for 1 hour 15 minutes or until most of the liquid has evaporated and the cabbage is tender. Check the seasoning, adding more maple and vinegar as necessary.
