    Maple Bacon Salad

    Serves: 4


    • 1 x 225g pack Waitrose Maple Cure British Bacon
    • 1 x 80g pack lamb's lettuce
    • 12 cherry tomatoes, halved
    • 12 quail eggs, hardboiled, peeled and halved The dressing:
    • The Dressing:
    • 3 sundried tomatoes in oil, drained and roughly chopped
    • 3tbsp oil from the sundried tomatoes
    • 1tsp Waitrose Red Pesto
    • 1tbsp Balsamic Vinegar
    • 1tbsp Waitrose Virgin Olive Oil
    • Salt and pepper


    1. Cook the bacon under a preheated grill for 2-3 minutes each side.
    2. Cut into strips then combine with the lamb's lettuce, cherry tomatoes and eggs.
    3. Place the sundried tomatoes with oil, pesto, vinegar and olive oil into a food processor and blend until smooth. Season to taste.
    4. Pour the dressing over the salad and serve immediately.
