    Maple Walnut Parfait

    • Preparation time: 20 minutes, plus freezing
    • Total time: 4 hours 20 minutes 60 minutes 60 minutes 60 minutes 60 minutes 20 minutes

    Serves: 8

    Ingredients

    • 170ml maple syrup
    • 1 egg white
    • Pinch of salt
    • 284ml carton double cream, lightly whipped
    • 60g toasted walnuts, chopped

    Method

    1. Put the syrup in a pan. Bring to the boil. Meanwhile, whisk the egg white and salt until it forms soft peaks.
    2. Slowly pour the hot syrup into the egg white, whisking constantly. Continue whisking until you have a thick, glossy mixture. Leave until cool.
    3. Fold in the cream and the walnuts. Spoon into a freezer container, or the bowls you're going to serve it in. Freeze for about 6 hours. Serve with a little more syrup and chopped nuts.
