    Marinated Lamb Steaks with Greek-Style Salad

    Waitrose lamb steaks from New Zealand have been frozen and packed separately so you can use as many or few as you wish. Thaw them safely by placing in a single layer on a plate in the fridge overnight. You can cook them from frozen, but first defrost in the microwave.

    Ingredients

    • 4 New Zealand lamb leg steaks
    • For the marinade:
    • 3 tbsp organic extra virgin olive oil
    • 3 tbsp lemon juice
    • 1 garlic clove, crushed
    • 1 tbsp finely chopped fresh oregano
    • Salt and freshly ground black pepper
    • For the salad:
    • 1 tbsp extra virgin olive oil
    • 1 beefsteak tomato, diced
    • ΒΌ cucumber, peeled and diced
    • 100g Greek feta cheese, diced
    • 12 Kalamata olives
    • 1 small red onion, finely shredded
    • 2 tbsp flat-leaf parsley leaves
    • Freshly ground black pepper

    Method

    1. Mix the ingredients for the marinade and spoon it over the chops. Leave to marinate for at least 30 minutes.
    2. Mix together the salad ingredients. Chill until required. Add the oil just before serving.
    3. Preheat the grill to high. Cook chops for 5 minutes each side until browned. Serve with the salad, dressed with oil, and some warm, crusty bread.
