    Marinated Turkey Kebabs

    Marinated Turkey Kebabs

    Turkey can be enjoyed all year round, not just at Christmas or Thanksgiving. These turkey steak kebabs make a low fat meal that is full of flavour and colour. They are ideal for grilling or barbecuing.

    • Cooking time: 15 minutes

    Ingredients

    • 1tsp Bart Spices Ground Cinnamon
    • 1tsp Bart Spices Ground Coriander
    • 500g pack 4 Waitrose Fresh British Turkey Breast Steaks
    • 1 tsp of Bart Spices Ground Ginger
    • 1 tsp dried mustard powder
    • 2 tsp caster sugar
    • 300g cherry tomatoes, washed and stalks removed
    • 2 large yellow peppers, washed and deseeded
    • 2-3 packs fresh bay leaves
    • 2 tbsp virgin olive oil
    • 4 pitta bread, to serve
    • 110g pack Waitrose Tenderleaf Salad, to serve

    Method

    1. Cut the turkey steaks into 2.5cm chunks. Place the turkey in a bowl and sprinkle all the spices, dried mustard and sugar over. Season with 1 tsp salt and freshly ground black pepper and toss together. Cut the yellow pepper into 2.5cm chunks.
    2. Thread the turkey, cherry tomatoes and pepper onto 8 bamboo skewers (see cook's tips). Start and finish each skewer with a folded bay leaf. Brush the skewers with olive oil. Place on a plate, cover and leave in the fridge for at least 15 minutes to allow the flavours to infuse.
    3. Preheat the grill to its highest setting. Arrange the kebabs on the grill pan and cook on a low shelf for 10-15 minutes, turning every couple of minutes to ensure even cooking. The turkey and peppers should be beginning to char. Make sure the turkey is cooked, there is no pink meat and the juices run clear when pierced. Serve with warm pitta bread and mixed leaf salad.

    Cook's tips

    Soak the bamboo skewers in warm water for a few minutes before assembling to help prevent them from burning during cooking.

    These skewers are ideal for cooking on the barbecue. Turn them frequently until thoroughly cooked.

    Note: Wash hands, equipment and work surfaces well after handling raw poultry.
