    Mediterranean Cod

    Serves: 2

    Ingredients

    • Fillet of cod (about 300g)
    • 1 tsp olive oil
    • 350g pot of fresh arrabiatta sauce
    • A handful of pitted black olives
    • To serve
    • Watercress or rocket
    • A handful of torn basil
    • Bread

    Method

    1. Preheat the oven to 220°C, gas mark 7. Cut a fillet of cod (about 300g) into 2, pat dry and rub with salt. Heat 1 tsp olive oil in a frying pan on a high heat until smoking.
    2. Add the fish, cook for 3 minutes, drizzle on a little more oil, turn and cook for 3 minutes more, until browned. Transfer to an ovenproof dish.
    3. Pour over a 350g pot of fresh arrabiatta sauce and a handful of pitted black olives. Bake in the oven for 5 minutes. Serve with watercress or rocket and a handful of torn basil, with bread to mop up the sauce.
