    Mediterranean Crostini

    Rather than serving a 'sit down' first course at a dinner party, pass round two or three different crostini with drinks before the meal. A selection of crostini also makes a perfect informal lunch for serving in the garden on a sunny day. A large selection of antipasti is available from the delicatessen counter.

    Serves: 8


    • 1 small baguette, cut into eight 1cm slices and toasted
    • Waitrose Extra Virgin Olive Oil
    • ½ clove garlic
    • 125g Waitrose Mixed Antipasti
    • 75g feta cheese


    1. Brush each slice of toast with a little olive oil and rub lightly with the garlic.
    2. Roughly chop the antipasti, crumble the feta and mix together.
    3. Divide between the slices of bread and serve.

    For the toasted bread crostini, toast the bread in advance and add the toppings shortly before serving.
