    Mediterranean fish parcels

    Steaming the fish in greaseproof paper parcels keeps it moist and flavoursome

    • 8 thyme sprigs
    • 8 tbsp dry white wine or fish stock
    • 250g essential Waitrose new potatoes, sliced
    • 4 x 170g skinned white fish fillets, such as whiting or haddock
    • 200g cherry tomatoes, halved
    • 1 garlic clove, crushed
    • 1 lemon, grated zest


    1. Preheat the oven to 220C, gas mark 7. Cook the potatoes in boiling water for 5 minutes and drain. Lay out 4 large pieces of greaseproof paper. Divide the par-boiled potatoes between them, then top with the fi sh. Scatter with the cherry tomatoes, garlic, lemon zest and thyme sprigs. Season, then drizzle 2 tbsp wine or stock over each fi llet. Fold into loose parcels, sealing the ends well.
    2. Put the parcels on a baking sheet and steam-bake for 16–18 minutes until the paper has puffed up and the juices are bubbling inside. Transfer the closed parcels to plates and serve with seasonal vegetables.
