    Mediterranean Goat's Cheese Salad

    Makes: 4 as a starter, 2 as a light lunch

    Ingredients

    • 1 aubergine
    • 1 small onion
    • 2 tomatoes
    • 1 pepper (red or green)
    • 110g pack of Waitrose Lemon & Garlic Couscous
    • Juice of ½ lemon
    • Salt and freshly ground pepper
    • 100g Capricorn English Goat's Cheese

    Method

    1. Chop 1 aubergine, 1 small onion, 2 tomatoes and a pepper, deseeded, into bite-sized pieces. Add 1tbsp olive oil and season well. Roast in a preheated oven 200ºC, gas mark 6 for 35-40 minutes, turning once.
    2. Meanwhile prepare a 110g pack of Waitrose Lemon & Garlic Couscous according to the instructions on the pack. While the vegetables and couscous are cooling, mix together a dressing of 1tbsp olive oil and the juice of ½ lemon with salt and freshly ground black pepper. Combine the vegetables with the couscous, add the dressing and toss well. Finally, add 1 x 100g pack of Capricorn English Goat's Cheese, cut into small pieces.
    3. Serve immediately.
