    Melon, Crab and Avocado Salad with Coriander Dressing

    Serves: 4 - 6

    Ingredients

    • 1 Galia melon
    • 2 ripe avocados
    • 1 x 80g bag mixed salad
    • 225g crab meat
    • 1 tbsp raspberry vinegar
    • 5 tbsp olive oil
    • Salt
    • Freshly ground black pepper
    • 1 chopped red chilli
    • 2 tbsp fresh coriander

    Method

    1. Remove the seeds and rind from one galia melon. Cut into slices and arrange in a salad bowl. Peel, stone and slice 2 ripe avocados and arrange over the melon slices. Add 1 x 80g bag mixed salad leaves to the bowl and flake 225g crab meat, preferably white, over the top.
    2. For the dressing, whisk 1tbsp raspberry vinegar with 5tbsp olive oil. with salt and freshly ground black pepper and add one finely chopped red chilli and 2tbsp chopped fresh coriander. Pour over the salad, toss well and serve immediately.
