    Melon and Lychees with Ginger

    • Preparation time: 15 minutes plus several hours chilling
    • Total time: 7 hours

    Serves: 6

    Ingredients

    • 1 large, ripe melon, such as cantaloupe or honeydew, skin and seeds removed and cut into small chunks
    • 2 x 425g tins lychees in syrup
    • 225ml marsala
    • 3 tbsp chopped preserved Chinese stem ginger

    Method

    1. Put the melon pieces in a bowl, add the lychees, one-third of their syrup, and the marsala. Toss lightly, cover with plastic wrap, and refrigerate for several hours.
    2. Transfer to a large serving bowl and sprinkle the preserved ginger on top and then serve.
