    Melon and Nectarine Salad with Thai Spiced Dressing

    Nectarines help turn this low fat, quick and easy starter into a real treat. Blackberries are a great alternative.

    Serves: 2

    Ingredients

    • 1 small ripe melon ( Charentais, Cantaloupe or Galia)
    • 1 ripe nectarine, stoned and diced
    • Fresh mint sprigs, to garnish
    • For the dressing
    • 2tbsp Bart Spices 88% Fat Free Coconut Milk
    • ½ tsp Thai fish sauce or light soy sauce
    • A good pinch of caster sugar
    • Finely grated zest and juice of ½ lime
    • 1 small red chilli, deseeded and finely chopped

    Method

    1. Peel, halve, deseed and thinly slice the melon, then arrange the slices on two plates. Scatter with the diced nectarine.
    2. Mix together the dressing ingredients and spoon over the fruits. Garnish with mint leaves and serve.
