    Melon with Coriander Prawns

    Serves: 4

    Ingredients

    • Bunch salad onions
    • 1 garlic clove
    • 1 red chilli
    • Crushed, toasted coriander seeds
    • Melon
    • 225g large cooked prawns
    • Zest and juice of 1 lime
    • 4 tbsp chopped fresh coriander
    • Salt
    • Freshly ground black pepper

    Method

    1. In a little warmed olive oil, briefly soften 1 bunch of chopped salad onions, 1 crushed garlic clove and a deseeded and chopped red chilli.
    2. Stir in 1tsp crushed toasted coriander seeds and leave to cool. Cut the melon into quarters, slice the flesh away from the skin and cut into chunks.
    3. Mix together the onion mixture, melon, 225g large cooked prawns, the grated zest and juice of 1 lime and 4tbsp chopped fresh coriander. Season generously with salt and freshly ground black pepper. Arrange salad leaves on a serving dish and pile the melon and prawns on top.
