    Mexican Steak Sandwich

    Here, all the juicy, spicy flavours of a fajita are packed between warm slices of crusty French bread.

    • Preparation time: 10 minutes
    • Cooking time: 10 minutes
    • Total time: 20 minutes 20 minutes

    Serves: 4


    • 550g sirloin steak
    • 1 tbsp Discovery Fajita Seasoning Mix
    • 1 tbsp vegetable oil
    • ½ avocado, peeled, stoned and sliced
    • ¼ red onion, sliced
    • Juice of 1 lime
    • 20g pack fresh coriander, roughly chopped
    • French stick, cut into 4 and sliced open horizontally
    • 170g tub Waitrose Fresh Vine Ripened Tomato Salsa Dip


    1. Preheat the oven to 170°C, gas mark 3. Place the steak in a mixing bowl, scatter with the seasoning mix and drizzle with the oil. Place a griddle or frying pan over a high heat and add the steak. Cook for 5 minutes for a medium steak, turning once, then rest on a plate for a few minutes.
    2. Meanwhile, in a bowl, mix the avocado, onion, lime juice and coriander together and season.
    3. While the steak is resting, place the bread pieces in the oven to warm for a few minutes. Trim the fat from the steak and slice thinly. Spread the bread with salsa and top with the steak slices and the avocado mixture. Serve immediately, with extra limes to squeeze over.
