    Mint Lemonade

    The fresh mint in this lemonade gives a twist to a classic, Victorian drink, making it particularly refreshing and cooling. Straining out the mint means that it can be made and kept for a couple of days.

    • Preparation time: 10 minute, plus 1 hour chilling
    • Total time: 10 minute, plus 1 hour chilling 60 minutes 10 minutes

    Serves: 4

    Ingredients

    • 80g Organic or garden mint
    • 3 Organic lemons, juice
    • 100g Granulated sugar

    Method

    1. Set aside one third of the mint and strip the leaves from the rest. Blend the leaves with the lemon juice and sugar in a blender or food processor, then add 700ml cold water.
    2. Strain into a jug and chill for 1 hour. Serve with ice and the remaining sprigs of mint.
