    Mint Sauce

    Serves: 4


    • 3 tbsp white wine vinegar
    • 2 tsp caster sugar
    • 3 tbsp freshly chopped mint


    1. One hour before serving, mix together 3 tablespoons of finely chopped mint with 1 tablespoon of boiling water and 2 teaspoons of caster sugar.
    2. Allow to cool, then stir in 3 tablespoons of white wine vinegar. This should be enough for 4 people. Serve with roast or grilled lamb.
