    Minted Salad of Mangetout with Smoked Salmon

    Serves: 4

    Ingredients

    • 250g mange tout
    • Juice of 1 lemon
    • 3 tbsp water
    • 100ml olive oil
    • Salt
    • Freshly ground black pepper
    • 1 x 75g pack of prepared watercress
    • 8 mint leaves, finely sliced
    • 1 x 200g pack Waitrose Smoked Salmon Long Cocktail Slices

    Method

    1. Blanch the mangetout in boiling salted water until al dente, then refresh in iced water.
    2. Mix the lemon juice with the water and olive oil and season well.
    3. Toss the mangetout, watercress and mint in the mixture until well coated.
    4. Place two-thirds of the mangetout mixture on four plates, then top with the salmon and the remaining mangetout.
