    Mock Caviar Salad

    • Preparation time: 15 minutes

    Serves: 4 - 6


    • 25g black lumpfish roe
    • 25g red lumpfish roe
    • 25g crustless white bread, soaked in water and squeezed almost dry
    • Half a bunch of spring onions, finely chopped
    • 50ml olive oil
    • 2 tablespoons lemon juice
    • Sea salt and freshly ground pepper


    1. You can't beat a big, old-fashioned pestle and mortar for preparing this dish. If you don't have one, use a large, heavy bowl and the back of a spoon.
    2. Put the roe, bread and spring onions into the bowl and work them together. Add the oil and lemon juice alternately and gradually.
    3. When all is homogenous, adjust the seasoning and serve cool but not chilled.
