    Monte Christo


    • 1 lime, cut into wedges
    • 2 tsp caster sugar
    • 30ml white rum
    • 15ml lychee juice, drained from a tin of lychees
    • 15ml raspberry liqueur
    • 30ml cranberry juice


    1. Place all the ingredients in a cocktail shaker or measuring jug and crush the limes with the end of a rolling pin, so they release their juices.
    2. Add a handful of ice to a tumbler and pour the cocktail over, allowing a few lime wedges to slip in.
