    Moroccan minced lamb

    Ingredients

    1 Waitrose Organic Onion, chopped
    400g pack Duchy Originals From Waitrose Organic Welsh Lamb Mince
    ½ tsp Cooks' Ingredients Organic Ground Cinnamon
    400g can Waitrose Organic Chopped Tomatoes
    100g Waitrose Organic Dried
    Pitted Apricots, chopped
    50g essential Waitrose Pitted Green Olives, halved
    2 preserved lemons, chopped
    250g Waitrose Organic Couscous

    Method

    1.Fry the onion and lamb in a large saucepan for 5 minutes to brown. Stir in the cinnamon, tomatoes, apricots, olives, lemon and 100ml water and simmer for 10 minutes, covered, stirring occasionally.

    2. Meanwhile, place the couscous in a bowl and pour over 300ml boiling water, cover and stand for 5 minutes. Fluff up with a fork and serve with the Moroccan minced lamb.
