    Moroccan Carrot Salad

    Serves: 4 as a starter


    • 500g large carrots
    • 3 oranges
    • 2 dessertspoons orange flower water
    • 2 dessertspoons caster sugar
    • Juice of 1 lemon
    • Salt
    • 1 teaspoon ground cinnamon


    1. Peel the carrots, remove the tough core and then grate them, finely. Peel the oranges and cut the flesh into small pieces, making sure you catch the juices.
    2. Mix the orange flesh and juice into the grated carrot together with the orange flower water, sugar, lemon juice and plenty of salt. Sprinkle ground cinnamon over the surface and chill well before serving.
