    Mozzarella, lemon and parsley salad

    • Vegetarian
    • Preparation time: 10 minutes

    Serves: 4


    • 1 slice crusty bread
    • 3 tsp extra virgin olive oil
    • 1 garlic clove, peeled
    • 2 x 125g balls buffalo mozzarella, drained, torn into large chunks
    • 1 lemon
    • 10g flat-leaf parsley,leaves picked
    • 1 tbsp double cream


    1. Drizzle the bread with 1 tsp olive oil and toast on both sides in until nicely charred. Rub with the garlic clove, then chop roughly.
    2. Put the cheese on a serving dish. Grate over the zest of the lemon; peel the fruit and cut the flesh into segments. Add this, the parsley and bread to the dish; drizzle with the cream and remaining oil.
