    Muffins with Sticky Toffee and Walnut Topping

    Ingredients

    • 25g unsalted butter
    • 2tbsp light brown sugar
    • 2tbsp whipping cream
    • 50g walnut pieces
    • 75g chopped dates
    • 4 Waitrose Banana Muffins

    Method

    1. Place 25g unsalted butter, 2 tbsp light brown sugar and 2 tbsp whipping cream in a pan.
    2. Cook over a medium heat for 2 minutes until the sugar dissolves. Bring to the boil, stirring continuously.
    3. Cook for 4-5 minutes until thickened. Leave to cool.
    4. Add 50g walnut pieces and 75g chopped dates and mix well. Serve with 4 warmed Waitrose Banana Muffins. Makes a delicious brunch or afternoon snack.
