Mulled Wine

Ingredients

  • 1 bottle robust red wine
  • 2 cloves
  • 2 blades mace
  • 2 allspice berries
  • 1 stick cinnamon, broken
  • 6 cardamom pods
  • Finely pared zest of 1 lemon
  • Finely pared zest of 1 orange
  • 100g caster sugar, or to taste

Method

  1. Put everything but the sugar into a non-corrodible pan over a low heat. Warm to just below boiling. Remove from the heat and leave to infuse for 10-15 minutes. Return to a low heat. When hot, but not boiling, sweeten to taste. Strain and serve immediately.

With a new electric socket in our small church vestry, we decided to serve this mulled wine recipe with mince pies after our annual carol service. We heated the wine and spices on a little two ring heater whilst the choir robed up - a bit of a squash - and left it to infuse on a very low heat during the service. At the 6th lesson I nipped back and added the sugar (not quite as much as specified: 500g for 6 bottles) and by the time the service was over, the wine was perfect, filling the church with alcoholic fumes... 6 bottles served 50 people, a case of feeding the 5000 perhaps. Highly recommended.
