    Mushroom and Goat's Cheese Pancakes

    Ready in 30 minutes

    Serves: 4

    Ingredients

    • 500 g mushrooms, sliced
    • 2 tbsp olive oil
    • 1 red onion, finely chopped
    • 2 cloves Cloves garlic, sliced
    • 100 ml white wine
    • 200 g spinach or chard leaves
    • 50g Chevre goat's cheese, chopped
    • 8 pancakes

    Method

    1. Heat the oil in a large frying pan and add the onion. Fry for 2 minutes, then turn up the heat and add the mushrooms and garlic. Cook for 5 minutes, stirring, until golden at the edges
    2. Add the wine; allow to bubble down until evaporated. Stir in the leaves and cook until just wilted
    3. Remove from the heat and add the cheese; divide the mixture between the pancakes, spooning into the centre, then fold them up. Tuck into a heatproof dish and warm under a hot grill for 2 minutes to crisp the tops
