    Mushroom Compote

    • Preparation time: 10 minutes
    • Cooking time: 20 minutes
    • Total time: 30 minutes 30 minutes

    Serves: 4 - 6

    Ingredients

    • 3 tbsp olive oil
    • 500g mixed mushrooms, sliced
    • 5 cloves garlic, sliced
    • 100ml red wine
    • 100ml ginger beer
    • 1 tbsp soy sauce
    • Salt
    • Freshly ground black pepper
    • 1 tbsp chopped lemon thyme

    Method

    1. Heat the olive oil in a large frying pan over a medium heat and sauté the mushrooms for 5 minutes until soft.
    2. Add the garlic, wine, ginger beer and soy sauce and simmer for about 15 minutes until thick. Season and sprinkle with thyme. Best served hot.
