    Mustard pork with red onions and tarragon cream

    A quick midweek recipe finished with crème fraiche

    Serves: 4


    • 2 essential Waitrose red onions
    • 1½ tbsp olive oil
    • 4 essential Waitrose British pork shoulder steaks, about 580g
    • 4 tbsp crème fraîche
    • 1 tbsp essential Waitrose wholegrain mustard
    • 2 tbsp chopped tarragon


    1. Preheat the oven to 220°C, gas mark 7. Thinly slice the onions; put in a large roasting tin. Season, drizzle lightly with some of the oil and bake for 10 minutes.
    2. Heat the grill to medium-high. Sit the pork steaks on the onions and season. Drizzle with the remaining olive oil and grill for 8–10 minutes on each side. Meanwhile, combine the crème fraîche, mustard and tarragon. Serve the pork steaks with a dollop of crème fraîche and some steamed green beans.
