    New Potatoes in a Salt Crust

    • Preparation time: 5 minutes
    • Cooking time: 45 minutes
    • Total time: 50 minutes 50 minutes

    Serves: 4


    • 750g baby new potatoes, scrubbed, but dry.
    • A few sprigs of fresh rosemary
    • coarse sea salt or rock salt (you'll need about 600g)


    1. Preheat the oven to 180C, gas mark 4.
    2. Put the rosemary in an ovenproof dish, and add the potatoes in a single layer. Pack the potatoes together closely and pour over enough salt to just cover them. Bake for about 45 minutes, or until the potatoes are tender. Brush off the salt, and serve hot.
    3. Serve with grilled fish or chicken, and salad.
