    Nuoc cham dipping sauce

    The ubiquitous and delicious dipping sauce, nuoc cham, is based on nuoc mam, the fermented fish sauce vital to the country’s cuisine. Versions of this sauce abound, but this is a good one to start with and can be adjusted to taste

    • Total time: 10 minutes to 15 minutes 15 minutes


    • 2 tbsp Caster sugar
    • 3 tbsp Rice vinegar
    • 5 tbsp Water
    • 3 tbsp Fish sauce
    • 2 tbsp Lime juice
    • 1-2 Finely chopped thai chillies
    • A combination of shredded, pickled carrot and radish, chopped garlic and ginger


    1. Gently heat the caster sugar and rice vinegar with the water and fish sauce until the sugar dissolves. Don't let it boil.
    2. Cool. Add lime juice and thai chillies. Ring the changes by adding combinations of chopped garlic, ginger and shredded, pickled carrot and radish.
