    Nutty Drop Pancakes

    • Total time: Ready in 20 minutes 20 minutes

    Serves: 4

    Ingredients

    • 1 ripe banana
    • 75g self-raising flour
    • 1 egg
    • 1 tbsp Dulce de Leche Caramel Toffee
    • 3 tsp water
    • 80g Waitrose Wholesome Pecan Nuts
    • 100g Dulce de Leche Caramel Toffee
    • 2 tbsp sunflower oil

    Method

    1. Lightly mash 1 ripe banana. Sift 75g self-raising flour into a bowl. Make a well in the centre and break in an egg. Add 1 tbsp Dulce de Leche Caramel Toffee and 3 tsp water. Whisk with the egg, gradually incorporating the flour to make a thick batter. Stir in the mashed banana and 40g Waitrose Wholesome Pecan Nuts chopped. Spoon 100g Dulce de Leche caramel Toffee into a small pan and heat gently.
    2. Heat 2 tbsp sunflower oil in a large frying pan and drop in large spoonfuls of the batter. Fry gently until golden flipping over halfway through cooking. Pile onto warmed serving plates. Scatter a further sliced banana and 40g roughly chopped Wholesome Pecan Nuts into the pan and heat. Scatter over the pancakes, pour over the caramel sauce and serve with vanilla ice cream.
