    Okra Ratatouille

    Serves: 6

    Ingredients

    • 1 onion, finely chopped
    • 4 tablespoons of olive oil
    • 1 clove of garlic
    • 1 teaspoon of cumin seeds
    • 500g Okra
    • 400g tin of organic chopped tomatoes

    Method

    1. Gently fry 1 finely chopped onion in 4 tablespoons of olive oil with 1 clove of chopped garlic until soft. Add 1 teaspoon of cumin seeds and fry for a minute more.
    2. Wash, top and tail 500g of okra. If small, cut in half; if large, cut into three rounds. Add to the onion. Fry for a further 5 minutes, stirring regularly, until the okra begins to soften.
    3. Add a 400g tin of chopped organic tomatoes with 200ml water. Season and simmer gently for 50 minutes or until the okra is soft and the tomato sauce thick. Mix in 3 tablespoons of chopped parsley. Eat warm or cold with warm pitta bread.
