    Olive Pavè with Artichoke Hearts and Goat's Cheese

    Ingredients

    • Olive petit pavé
    • Goat's cheese
    • Freshly ground pepper
    • Sea salt
    • 3 pieces of grilled, marinated artichoke hearts
    • 1 handful rocket

    Method

    1. For 1, slice an olive petit pavé in half lengthwise and brush each half with extra virgin olive oil. Crumble goat's cheese, such as Capricorn or Chavroux, on to the bottom half of the bread. Sprinkle with freshly ground pepper and a pinch of sea salt.
    2. Top with 3 pieces of grilled, marinated artichoke heart and a handful of rocket. Drizzle with a little of the artichoke oil, top with other half of the bread, slice and serve.
