    Orange-Glazed Chantenay Carrots

    Chantenay carrots have a natural sweetness that is accentuated by orange zest and juice.

    Serves: 6


    • 25g unsalted butter
    • 500g pack Chantenay carrots, trimmed
    • Grated zest and juice of 1 small orange
    • 25g pack fresh curly parsley, finely chopped


    1. Place the butter in a heavy-based sauté or frying pan set over the lowest heat. Add the carrots and cook for 40 minutes, shaking the pan occasionally, until the carrots are tender.
    2. Increase the heat to high and add the orange zest and juice. Bubble vigorously for 4-5 minutes until the juice reduces just enough to give the carrots a shiny coating. Season and stir in the parsley.

    Carrots cooked this way are also delicious served at room temperature as part of a salad or an antipasti alongside houmous, black olives and marinated tomatoes.
