    Orecchiette with Chilli, Broccoli and Pine Nuts

    Serves: 4


    • 400g orecchiette or other pasta shapes such as conchiglie
    • 400g-head broccoli, cut into small florets
    • 100ml olive oil
    • 2 cloves garlic, thinly sliced
    • 1 red chilli, deseeded and diced
    • 50g Parmesan, grated, plus extra to serve
    • 50g pine nuts, toasted
    • Salt and freshly ground black pepper


    1. Cook the pasta according to packet instructions, adding the broccoli for the last three minutes of cooking time.
    2. Meanwhile, heat the olive oil in a frying pan over a low heat. Add the garlic and chilli and cook for 1-2 minutes. Drain the pasta and broccoli, add to the frying pan and mix with the garlic and chilli. You can use a fork to mash the broccoli pieces a little. Stir in the Parmesan and pine nuts. Season well. Serve with extra Parmesan.
