Organic Meatballs In A Fennel And Tomato Sauce

Ingredients

  • 2 tbsp organic olive oil
  • 2 organic garlic cloves, roughly chopped
  • 1 small organic fennel bulb, trimmed and chopped
  • 1 organic carrot, chopped
  • 150ml Kallo Organic Beef Stock
  • 2 x 400g cans organic chopped tomatoes
  • 2 x 300g packs Waitrose 20 British Organic Free Range Pork Meatballs
  • 20g pack fresh organic flat-leaf parsley, chopped
  • 450g Waitrose Wholesome Buckwheat Fusilli pasta, cooked, to serve

Method

  1. Heat the oil in a large saucepan, add the garlic, fennel and carrot, and cook, stirring occasionally, for 3-4 minutes until the vegetables begin to soften.
  2. Pour in the hot stock and cook for 1-2 minutes, then tip in the tomatoes plus half an empty tomato can of water. Season and bring to the boil. Reduce the heat and simmer for 10-15 minutes until the sauce has thickened and reduced slightly. Remove from the heat.
  3. Blend the sauce until smooth, using an electric hand blender. Add the meatballs and carefully stir to coat with the sauce. Simmer gently for 15-20 minutes, or until the meatballs are thoroughly cooked. Add the parsley and serve with the cooked pasta.

Cook's tips

To prepare a fennel bulb, trim the root and leaves, remove the tough outer layer, then cut in half and chop as you would an onion.

Drinks recommendation

Serve with a glass of Waitrose Apple, Pear & Blackcurrant Juice.

This has become a regular midday family meal for us. Lovely, and very simple to make

i love this recipe! it always goes down well as is really quick and simple to make. i actually only use one tin of tomatoes and some stock as i prefer the sauce to be less tomatoey - it still taste just as good. it's also really quick and easy to make your own meatballs with mince, breadcrumbs, egg yolk, onion, a bit of mustard and salt and pepper.

Just used the tomato sauce recipe for my own meatballs and it was a good, a definite addition to the family meal plan!

This is one of my favourite recipies and now a regular in our household...and not just for children!!!
