    Organic Squash and Ham Bowl

    Ask at the delicatessen counter for a chunk of hand-carved organic ham, which you can chop yourself. If you prefer, see if they have any trimmings or even a ham bone which you can trim at home. Try organic sweet potatoes, too, as they are a good alternative to squash.

    • 1 organic onion, roughly chopped
    • 1kg organic butternut squash or pumpkin, peeled, deseeded and cut into cubes
    • 50g Yeo Valley Organic Butter
    • 1tbsp Waitrose Organic Plain Flour
    • 300g hand-carved organic ham, in thick slices or one chunk, cut into 2.5cm cubes
    • 1 pack Waitrose Organic Basil, roughly chopped
    • Sea salt and freshly ground black pepper
    • Warm Waitrose Organic Stoneground Brown Bread or other organic variety, to serve


    1. Cook the onion and half the squash in the butter for 5 minutes until just starting to soften.
    2. Stir in the flour and mix well to absorb the butter. Add 600ml water, a little at a time, stir until smooth and bring to the boil.
    3. Add the squash, ham and basil, then season to taste with salt and pepper. Return to the heat, bring to the boil, then simmer for 20 minutes, stirring occasionally until the squash is tender.
    4. Divide between four large soup bowls and serve with warm bread.
