    Oriental Fruit Skewers

    • Preparation time: 20 minutes
    • Cooking time: 10 minutes
    • Total time: 30 minutes 30 minutes


    • 150ml Momokawa Ruby Sake or dry sherry
    • 50g Waitrose Golden Caster Sugar
    • 2 star anise
    • ¼ tsp Bart Spices Chinese Five Spice
    • 24 lychees
    • 1 medium pineapple, peeled, cored and cubed


    1. Place the sake, sugar, star anise and Chinese five spice in a small pan and heat gently, stirring until the sugar dissolves. Bring to the boil and simmer rapidly for 5 minutes.
    2. Meanwhile, peel the lychees and carefully remove the stones. Thread the lychees and pineapple cubes alternately onto 12 skewers. Transfer to a shallow dish and pour over the syrup. Set aside for 5 minutes.
    3. Arrange the skewers on a baking tray lined with foil and cook under a preheated grill for 8 minutes, turning occasionally until lightly golden.
    4. Divide between four plates, drizzling over any remaining syrup. Serve warm with Waitrose Pineapple and Mango Swirl Sorbet.

    Cook's tips

    Star anise adds a typical Asian flavour to the syrup but you could try using a couple of dried kaffir lime leaves or a sliced lemongrass stalk in its place. If using wooden skewers, soak in cold water for an hour or so to stop them burning under the grill.
