    Orlean Coffee

    Serves: 4


    • Strong black coffee, enough for 4 people
    • 4 strips orange zest
    • A few cloves
    • Grated lemon zest
    • 1tsp unrefined brown sugar
    • 5 tbsp cognac
    • 5 tbsp Benedictine


    1. Make enough very strong black coffee for 4 people. Using a vegetable peeler, take 4 strips of zest from an orange and stud each one with a few cloves.
    2. Place in the bottom of 4 heatproof glasses with a little grated lemon zest and 1tsp unrefined dark brown sugar. Pour 5tbsp each of cognac and Bénédictine into a ladle or small milkpan, heat and then carefully ignite.
    3. Dim the lights and pour the flaming liqueur into the glasses. Pour the coffee on top and allow it to cool slightly.
