    Osovoh - Red Rice

    Serves: 8


    • 8 tablespoons sunflower oil
    • 1kg braising steak, cut into chunks
    • 4 medium-sized carrots, cubed
    • 18 large prunes, pitted
    • 1 Granny Smith apple, peeled, cored and cut into large cubes
    • 18 dried apricots
    • 1 x 450g can chopped tomatoes
    • 2 tablespoons tomato purée
    • 600ml chicken or beef stock
    • 500g basmati rice, washed
    • Salt and white pepper


    1. Heat the oil in a large, heavy ovenproof saucepan. Add beef and carrots, and fry until the meat is brown and begins to soften.
    2. Add the prunes, apple, apricots, chopped tomato and tomato purée, and season well. Cover with the stock and simmer for 30 minutes.
    3. Now add the rice, cover and simmer until the juices have disappeared and the rice is cooked (about 15 minutes). Place the covered pan in a preheated oven (130°C, gas mark 1/2) for 4 hours.
