    Oven-Baked Skate with Warm Green Salsa

    The meaty flesh of skate wings is perfect served with a gutsy green salsa and plenty of creamy mashed potato to soak up the juices.

    • 1 clove garlic, crushed
    • 2 tbsp Waitrose Cooks' Ingredients Nonpareille Capers, drained
    • 2 anchovy fillets in olive oil, drained
    • 20g pack fresh flat-leaf parsley, roughly chopped
    • 2 x 10g pack fresh dill, roughly chopped
    • 3 tbsp olive oil
    • 1 tbsp lemon juice
    • 1 tsp wholegrain mustard
    • 2 fresh skate wings, about 150-200g each, from the Fish Service Counter


    1. Preheat the oven to 200°C, gas mark 6. Place all the ingredients, apart from the fish, in a food processor and blend until smooth.
    2. Take 2 pieces of baking parchment, each twice the size of the skate wings, and fold them in half, then fold up the 2 sides tightly to make bags. Spread the tops of each piece of fish with half the salsa, then place in the bags. Seal each one up tightly by folding over the open side. Place side by side in the base of a large roasting tin.
    3. Bake for 12-15 minutes until the fish is opaque and just cooked through. Serve the skate wings with oven-roasted vine tomatoes and mashed potato (try our ready prepared mashed potato if time is short).

    Cook's tips

    To eat skate, use a fork to gently scrape the ribbed flesh away from the central layer of solid bone. Turn the fish over and repeat.
