    Oven-Cooked Raspberry Jam

    • Preparation time: 20 minutes, plus cooling
    • Cooking time: 30 minutes
    • Total time: 50 minutes, plus cooling 50 minutes

    Serves: 6


    • 1kg raspberries
    • 1kg granulated sugar


    1. Preheat the oven to 180°C/gas 4.
    2. Pick over the raspberries, then put them in flattish baking dish. Spread the sugar in a similar dish. Put both dishes in the oven until everything gets really hot - allow 20-30 minutes. Remove from the oven, add the sugar to the raspberries and stir together with a wooden spoon until well mixed.
    3. Transfer the jam to warm jars, which have been sterilised by putting them through the dishwasher, or by washing thoroughly and drying in a low oven for 30 minutes. Seal and store for up to 6 months.
