Pan-Fried Cabbage with Garlic and Mustard Seeds

Stir-fried green cabbage not only looks gorgeous, it also tastes amazingly sweet and nutty when cooked with garlic and mustard seeds. Use 2 small pointed spring cabbages instead of 1 large green cabbage, if you prefer.
Ideally, use 2 frying pans or woks for this recipe; otherwise, cook in batches, taking care to keep the first batch warm as you cook the remaining cabbage.
