Pan-Fried Cabbage with Garlic and Mustard Seeds

Stir-fried green cabbage not only looks gorgeous, it also tastes amazingly sweet and nutty when cooked with garlic and mustard seeds. Use 2 small pointed spring cabbages instead of 1 large green cabbage, if you prefer.

    • Preparation time: 10 minutes

    • Total time: 13 minutes 15 minutes

    Serves: 6

    • 1 large green cabbage
    • 6 tbsp sunflower oil
    • 2 cloves garlic, finely sliced
    • 3 tsp Bart Black Mustard Seeds

    1. Trim the cabbage by cutting away and discarding any tough outer leaves. Slice in half and cut out the white inner core of the stem. Finely slice each cabbage half, then place in a colander and wash thoroughly.
    2. When you are ready to serve, set 2 large non-stick frying pans or woks over a medium high heat. Pour 3 tablespoons oil into each frying pan. Divide the garlic and mustard seeds equally between the 2 pans. As soon as the garlic begins to sizzle and the mustard seeds begin to pop, divide the sliced cabbage evenly between the 2 pans. Season and stir-fry briskly for 2-3 minutes or until the cabbage begins to collapse and turns a bright, glossy green. Serve immediately.

    Cook's tips

Ideally, use 2 frying pans or woks for this recipe; otherwise, cook in batches, taking care to keep the first batch warm as you cook the remaining cabbage.
